OPPORTUNITY The Sous Chef of Packaging is responsible for creating an inspiring culinary experience for our guests. They give outstanding service by meeting and exceeding our guests’ expectations and providing excellent internal service to the team. Their responsibilities including assisting in the smooth and seamless operation of all aspects of the Catering & Commissary Kitchen, reaching company goals, upholding product quality and consistency standards, mitigating waste, maintaining equipment and facilities, and safely handling all of our products and equipment. They are part of a cohesive Bi-Rite team that supports the Bi-Rite Missions, Vision, and Community Values. Responsibilities Supports the Executive Chef and Executive Pastry Chef in the overall success of the business by supervising the day-to-day operations for catering, prepack and culinary production teams. Assists in the achievement of long-term financial goals and the implementation of Bi-Rite campaigns and initiatives. Manages the production of seasonal and delicious menu items (e.g., catering and prepack) that meet and exceed our guests’ expectations. Collaborates with the Sous Chef – Packaging Wholesale and Sous Chef Sweet cross-training staff, and providing coverage directed by the needs of the business. Responsible for hiring, training, managing, and developing culinary staff (12-15 kitchen staff.) Develops, documents, and trains culinary staff on systems and standard operating procedures. Accountable for completing staff training schedule and works with Assistant Kitchen Managers to keep training documents up to date. In partnership with Executive Chef and Executive Pastry Chef manage staff engagement, growth, and retention. Monitors staff performance through motivating, coaching, and performance improvement plans. Reviews overall staff performance with regular feedback conversations. Responsible for product quality, packaging, storage, training, and ensuring financial performance standards are met. Ensures all products received/delivered are accurate according to specifications in quality, size, pack, and pricing. Responsible for maintaining organized and accurate inventory levels and participating in period end physical counts. Utilizes technology/software to aide in the management of production and people (e.g., Parsley, Paycom, Microsoft Suite.) Handles damaged, out-of-date, spoils, product QA's and returned products to department standards. Qualifications Passion and knowledge of food; ability to educate and inspire food knowledge and interest with staff. 2+ years experience working in a commercial kitchen recommended. 1+ year experience supervising commercial kitchen staff with proven ability to deliver training and coaching effectively. Solid math skills for basic budgeting and inventory control. Critical thinking, troubleshooting, data analysis, and process building skills; meticulous attention to detail. Ability to deliver training and coaching effectively. Experience with recipe costing systems (e.g. Parsley) strongly preferred. Ability to work nights and weekends when needed. Must be 18 years of age or older. Fluency in English language, spoken and written. Bi-lingual in English and Spanish strongly preferred. ServSafe Manager’s Certification is required within 30 days post-hire.
