The Chef de Cuisine is responsible for leading day-to-day kitchen operations for a high-volume steakhouse within a casino property in Central California. This role ensures exceptional food quality, consistency, and execution while driving team performance and maintaining strong financial controls in an upscale dining environment.
Qualifications
Proven experience as a Chef de Cuisine or strong Sous Chef in a high-volume steakhouse or upscale restaurant
Strong knowledge of meat cookery, butchery, and high-end plating standards
Experience with food cost control, labor management, and kitchen team leadership
Responsibilities
Oversee daily kitchen operations, ensuring consistent execution, quality, and presentation
Manage ordering, inventory, scheduling, and cost controls to meet financial goals
Lead, train, and develop the culinary team while maintaining sanitation and operational standards
